Quick and Easy International Chicken Recipes

Three of my tried and tested chicken recipes, for the foodie who is a lazy cook :)


I love to eat yummy food and I don't like to spend more than fifteen to twenty minutes in the kitchen, if I am cooking on my own. So, if you are like me, you will surely enjoy the following recipes :)

Thai-chicken Fusion Salad


This is my very own creation. I loved it very much :)

Serves: 2

Total Time: 15-20 minutes


Ingredients


For the Marinate

  1. 200g of Chicken breast

  2. Half a mug of yogurt

  3. About 3 tsp of red Thai-curry paste.

  4. Oil for heating chicken on pan (I used sunflower oil)


For the salad

  1. A packet of Corn-salad leaves (Feldsalat)

  2. Single big Capsicum or Bell Pepper

  3. Salt and pepper to taste

  4. Cranberry Vinegar


Preparing the Chicken

  1. Marinate 200g of Chicken breast in about half a mug of yogurt and about 3 tsp of red Thai curry paste.

  2. Keep the marinated chicken in the fridge overnight. (not a must, but great for tender juicy chicken).

  3. Just before you make the salad, heat oil on the pan and cook the chicken on medium-high heat. It takes about 5-7 minutes per side, till they start getting a slightly brownish colour.


Putting the Salad together


1. Whilst the chicken is cooking, cover the base of your serving plate with corn salad leaves.

2. Add half chopped capsicum/ bell pepper over the corn salad per dish.

3. Sprinkle the veggies with salt and pepper.

4. Add cranberry vinegar as per taste. I prefer about 2-3 tsp per dish and mix the salad

5. Top it off with juicy cooked chicken from the pan and ENJOY!! :)



Indian Chicken Puffs


Serves: 2

Prep Time: 20-30 minutes Total Time: 30-40 minutes

(I know, it is a tad little lengthy procedure than I am used to because of the baking involved. But it is so worth it :))


Now, in India we have a snack culture. So, at 4 or 5pm tea-time, which is also the after work or after-school time, we love to indulge in a big scrumptious bite alongside a hot tea.
Indian Chicken-puffs was my choice for dinner the other day. I was very proud of how tasty they turned out to be.

*And no, I do not know the lady in the video of the chicken puffs or the author of Cafedelites (baked chicken recipe below). Also, I have no monetary gains from sharing their links with you. My only intention is to recommend a tried and tested recipe, just like I would do with a friend. Though I am listing the Ingredients extra for you to give you an overview before you dive into the individual recipes.


Ingredients


  1. 2 Tbsp. oil

  2. 1 large finely cut onion

  3. 1 chopped green chili (avoid if you are European)

  4. 1/2 tsp ginger garlic paste

  5. 1 big chopped tomato

  6. 1 tsp coriander powder

  7. 1/ tsp chili powder or cayenne

  8. 1/4 tsp turmeric powder (kurkuma)

  9. 1/2 tsp garam masala

  10. salt to taste

  11. 200 g boneless chicken

  12. 150 ml water

  13. fresh coriander leaves chopped (good if you have them, if not its okay too)

  14. I used ready-made pastry dough sheet from the supermarket. So I let the chicken cool for 10 minutes, then added the chicken filling to the individual squares I cut in the pastry sheet. Then I sealed them by applying water on the edges. According to the pastry sheet packing, they were to bake for 10 minutes at 220 degree Celsius. They turned out just fine.. great pastry and moist filling.


Its truly very easy to make the chicken. The filling is so tasty, that you can even skip the puff and eat the chicken with bread instead.




Garlic-Parmesan Chicken


A 5 minute prep and the oven does the rest of the work for you :)

Serves: 2

Prep: 5 min total time: 25 min


All you need to do is put the chicken in the baking dish, add oil and spices, then shove it into a preheated oven.

the changes I made are listed below.


Ingredients:


1. paprika mild (I used chili powder)

2. brown sugar

3. oregano (or Thyme)

4. onion powder (I added spice mix with onion powder, chili, petersilie instead)

5. garlic powder (I used fresh garlic)

6. salt and pepper

7. olive oil

8. 200 g chicken

9. I also added grated parmesan cheese over the chicken just before I shoved it into the pre-heated oven.
