7 of My Quick and Easy German & European Recipes

On the go veggie Meals with just 1 to 5 minutes of prep time that will make you happy :)



I know, that I promised my subscribers to post some Indian super yummy recipes as well. But now that I actually write this post, I think an extra post would make it easy for all of us, as they require a different set of ingredients than the European ones. For now, do enjoy the following yummy bites :)


If you are Asian, simply add more chili or Tabasco to the savoury dishes to make them more appealing to your taste buds ;)


1 MINUTE PANCAKE

A recipe I learnt from a dear friend from Portugal. Its so easy and tasty that there is no stopping anybody from making pancakes! The following proportion makes 4-6 Pancakes depending on their size and thickness.


In a mixing bowl, beat 1 Egg

+ 1/2 Glass Flour & mix

+ 1/2 Glass Milk & mix

Sprinkle pinch of salt & mix


Batter is Ready! Keep aside for 10 min.


Ensure the pan is hot & then add butter on a pan, pour in the batter and spread it till it takes a round shape, tilting the pan if necessary. Heat till both sides are golden brown and enjoy with any topping of your choice: powdered sugar/ jam/ honey/ cheese with salt and pepper.


*If you think the pancake is thicker than you like, dilute the batter with more milk.

*Using high flame gas/ stove will ensure nicer and quicker pancakes.



APPLE PANCAKE

An eleven year old cutie pie from north Germany, introduced me to this recipe. All you need is my pancake batter recipe from above, a chopped apple and some sugar. For 1 apple pancake:


heat 1/2 tsp butter on pan

add the apple cubes of and saute till semi soft (medium flame)

add pancake batter to the apple on pan

sprinkle sugar on it (as per how sweet you like to have it)

(alternately, you can also mix the sugar in batter)


Flip pancake, ensure both sides are golden brown and enjoy :)



FLAMMKUCHEN (GERMAN PIZZA)

in Curry flavour with Avocado

Flammkuchen have thin crusts. The topping is of cream-base unlike tomato sauce on pizza. Most Flammkuchen are in the savoury category. They have different traditional toppings. The following two recipes are my own creations, where I put together what I had at home. It turned out super yummy!


Dough

I buy 'Flammkuchen Teig', which is a big sheet of dough specially made for this dish, directly from the supermarket. Worst case scenario, you can use a ready made thin sheet of pizza dough as well. Else follow the following quick recipe (with video), which I have translated from the link below (it will turn out great. Will just take 3-4 minutes more of your time).


For 1 tray full of Flammkuchen, mix 250 g of Flour, 2 tbsp olive oil, a pinch of salt and 125 ml water. Kneed a bit and let rest till you prepare the topping.


Topping


take 200 g Creme Fraich (thick fresh cream) in Bowl

season with salt and pepper

Add curry powder 1/8th to 1/4th tsp (beware this is the German/European curry powder, not Indian), depending on how strong you fancy the flavor

I also mix some chili flakes and cayenne Pepper in it

Spread this mix on the rolled out dough

Distribute thinly sliced onion over the cream spread (see pic above)


Put in a preheated oven at 220 degree with fan or 240 degree normal

Bake for about 15-20 minutes, on the lowest shelf in oven (for crispy base)

Add pieces of Avocado on top and...

Tadaaaa! Ready to eat :)




FLAMMKUCHEN (GERMAN PIZZA)

with Tomato and Mozarella


Topping


Take 200 g Creme Fraiche (fresh cream) in mixing bowl

Season with salt, pepper

Apply above cream spread on the sheet of dough (recipe under Curry-Avocado Flammkuchen)

Spread chunks of mozzarella cheese all over the sheet

Add pieces of chopped cherry tomatoes to it.

Sprinkle italian herbs and rosmarin on the entire sheet.


Put in a preheated oven at 220 degree with fan or 240 degree normal

Bake for about 15-20 minutes, on the lowest shelf in oven (for crispy base)

and enjoy :)



NOODLES WITH TOMATO SAUCE #vegan

The following recipe is for two plates of food, an a tomato variation of the italian traditional dish 'Agio Olio'. Total cooking time: 15 to 20 minutes.


Cook 4 handfuls of Penne noodles in boiling water (will take 8-10 min, check instructions on pack)


Till it cooks, you can prepare the sauce:


heat 1 tbsp olive oil in a pan (medium flame) - if you dont have olive oil, use any other oil.

add 1 chopped small onion to it and saute 2 min

Add 2 chopped garlic cloves and saute 1 min

Add 3-4 medium chopped tomatoes and mix

Add chili flakes, salt and pepper for seasoning


cook sauce for 5 minutes

Drain noodles and add to the sauce and cook for 2-4 minutes


You are ready to serve! Top with basil leaves and maybe even parmesan cheese for garnishing.


*You can add mozarella cheese to dish, immediately after you mix the noodles and the sauce. Or even add fresh cream to the tomato sauce to get a creamy version of the sauce. Enjoy!



MUSHROOM-RICE #veganrecipe

This recipe is a big time hit in my friend circle. I learnt it from a German Grandma. You will need either 2-3 portions of cooked rice or use 2-3 portions of leftover rice. By 1 portion I mean about a mug full. Total cooking time: 20 min.

Heat 1 tbsp butter and 1 tbsp olive oil on a pan (medium flame)

Add a big finely chopped onion to it, saute 3-4 min

Add 2 cloves of chopped garlic, saute 1 min

Add 200 g chopped mushrooms, saute 2 min

Put lid on pan and let it cook 6-8 min (till the mushrooms shrink)

Add salt & pepper for seasoning

(instead of salt you can also add vegetable broth powder for extra flavor)

At times I also add a little bit (1/4 tsp of chili powder for a little spiciness)

Mix the cooked rice in pan, top it off with chopped basil.

Ready to serve!


*Same recipe can also be made with cooked noodles

*Before adding the rice, you can add cream (whipping cream, without the whipping) to the sauce. It will make a creamy, runny sauce, that is fantastic with noodles as well as rice. Ensure, if the seasoning of salt and pepper is adequate after adding the cream. In this case, serve the noodles/ rice & sauce separately. Do not mix them in pan.



OMELET WITH HERBS

The above pictures are from my kitchen window and balcony. When the sun shines, its a lovely place to just be :) I like eggs and I love herbs. Total Cooking time: 5 min


Single Portion

Start heating a pan (medium or high flame)


Beat two eggs

Add salt, pepper, a dash of cayenne pepper (or chili powder)

Add mixed herbs or Italian herbs

you can add 1/4th chopped onion (optional), thinly sliced as well and mix

Add 1/2 tsp butter to heated pan

Pour the omelet mixture, into a round shape

cook till both sides are slightly golden brown

sprinkle fresh basil on top while serving


*You can place a cheese slice or two (optional), on one half of the omelet and fold it, while cooking it on pan. It will give you a cheese stuffed omelet.
